It’s graduation day! Our youngest brother, Tarik, is leaving high school behind to start his journey in college.

It’s a big day for us all. It always seems like the youngest takes forever to catch up to the rest of us who have already found our career paths, or are finishing up college in that first step towards adulthood and responsibility. Back when we were in elementary school and mom used to drive us to school, we had a weekly ritual. I have to say, I never looked forward to Fridays as much as I did in elementary and middle school because Fridays meant we left a little bit earlier so we could stop at Krispy Kreme for a donut and chocolate milk. I mean, what kid wouldn’t love that?! Yes, it involved waking up a bit earlier, but it was all for a good cause, and in my mind then, a perfectly legitimate reason to jump right out of bed. (more…)

Shakshouka originated in North Africa. For those more geographically-impaired, that would mean the countries of Tunisia, Libya, Algeria and Morocco. It’s also become popular in Yemen and Saudi Arabia, with restaurants in those parts popping up solely to serving up the dish. Shakshouka means “a mixture.” And that’s exactly what this dish is, it’s a delicious mix of tomatoes, peppers, eggs and cheese. (more…)

Valentine’s Day is right around the corner. I know, I’m a total sucker for all these Hallmark holidays. It gives me something to look forward to. I just love the themes. And the girly side of be loves being able to flaunt pink and red for an entire month. The Hallmark holidays give me the opportunity to get crafty too. I enjoy pulling together artsy surprises for my family and the girls.

Crafts aren’t the only way to show Holiday Love. We all know that the best way to a anyone’s heart, is through their stomach. Ah, I couldn’t have said it better myself. So in addition to my little crafts, heart-shaped food is the way to go. (more…)

A couple days ago I gave you all a glimpse into my mom and my mother-daughter trip. Taking one of those as an adult is really important because you start to realize how much closer you are to your mom when you’re not trying to keep things from her as a teen/college student who’s obviously getting into some sort of trouble. It’s a whole new perspective when you realize you and your mother have a lot more in common than you think, and she can actually give you some pretty good advice. Especially because watching you grow up, she probably knows a lot more about you than you thought, or that you even knew yourself. Rude Awakening. (more…)

Chunky Chocolate Blueberry Pancakes

 

 

I was having a mad craving for pancakes this Saturday. Unfortunately, I didn’t realize until after I started mixing ingredients together that we were low on eggs, and our applesauce went bad because I forgot to stick it in the fridge after opening – Woooops! So what’s a girl to do? I did some quick research online and found that I could use oil and water.

Chunky Chocolate Blueberry Pancakes Recipe

Ingredients

2 cups Bisquick Mix
1 cup Milk
1/2 cup egg substitute (or 2 tablespoons vegetable oil, and water to desired consistency)
Chocolate Chips, to desired chunkiness (I used 1/4 – 1/2 cup)
Blueberries, to desired chunkiness  (I used 1/2 cup)
 

Directions

Mix dry ingredients together first, then add wet ingredients.
Add chocolate chips and blueberries.
Heat a large skillet over medium-high heat.
Cook each pancake until browned to your liking.
Serve with Maple Syrup.
