Chocolate Peanut Butter Date Bars

Ingredients

  • 18 –20 Medjool dates pitted
  • 1 cup creamy peanut butter
  • ¾ cup roasted salted peanuts
  • 175 g semi-sweet chocolate
  • 1 tablespoon coconut oil optional

Instructions

  • Line an 8x8-inch pan with parchment paper.
  • Arrange the dates in a single layer, pressing them together tightly.
  • Cover with parchment and press into an even layer using the bottom of a measuring cup or glass.
  • Microwave the peanut butter for 30 seconds until smooth and spread evenly over the dates.
  • Sprinkle the roasted peanuts over the peanut butter and gently press them down.
  • Melt the chocolate with the coconut oil until smooth and pour over the peanuts.
  • Spread the chocolate into an even layer.
  • Freeze for about 1 hour, or until firm.
  • Slice into bars using a warm knife.
  • Store in the freezer or refrigerator.

Notes

  • I personally think these taste best straight from the freezer.
  • Use soft Medjool dates for the easiest assembly.
  • Salted peanuts give the best sweet-and-salty balance.
