Line an 8x8-inch pan with parchment paper.
Arrange the dates in a single layer, pressing them together tightly.
Cover with parchment and press into an even layer using the bottom of a measuring cup or glass.
Microwave the peanut butter for 30 seconds until smooth and spread evenly over the dates.
Sprinkle the roasted peanuts over the peanut butter and gently press them down.
Melt the chocolate with the coconut oil until smooth and pour over the peanuts.
Spread the chocolate into an even layer.
Freeze for about 1 hour, or until firm.
Slice into bars using a warm knife.
Store in the freezer or refrigerator.
