Easy Chia Pudding Recipe

This easy chia pudding recipe takes only a few minutes to mix together and sets overnight in the refrigerator. Prepare one batch for the week, then add different fruits, nuts, spices, and other toppings to each serving.

Ingredients

  • cup chia seeds
  • 1 cup liquid such as unsweetened coconut milk, almond milk, soy milk, oat milk, or regular milk
  • 1 teaspoon sweetener such as maple syrup, natural honey, jam, white sugar, or brown sugar
  • 1 teaspoon flavor enhancement such as vanilla extract or almond extract
  • 1 teaspoon nut butter optional
  • Desired fruit nuts, or other toppings, for serving

Instructions

  • Add the chia seeds, liquid, sweetener, flavor enhancement, and optional nut butter to a medium bowl.
  • Stir thoroughly until the ingredients are well combined and the chia seeds are evenly distributed throughout the liquid.
  • Cover the bowl and place it in the refrigerator overnight.
  • When ready to serve, remove the chia pudding from the refrigerator and stir it well.
  • Scoop one or two servings of chia pudding into a small mason jar or bowl.
  • Add your desired fruit, nuts, spices, nut butter, jam, or other toppings.
  • Serve chilled.

Notes

  • My go-to liquid is unsweetened coconut milk, but almond milk, soy milk, oat milk, and regular milk also work.
  • I usually add a heaping teaspoon of peanut butter, which is often closer to a tablespoon.
  • Add a teaspoon of cocoa powder when you want chocolate chia pudding.
  • Cinnamon, cardamom, and pumpkin spice are easy ways to change the flavor.
  • Keep fresh fruit and toppings separate when preparing the pudding for the week. Add them to each serving immediately before eating.
  • Stir in a splash of milk before serving if the pudding is thicker than you prefer.
  • Try almond extract, honey, fresh figs, and almonds for one of my favorite flavor combinations.
