Mix flour, salt, sugar, yeast, and ¼ cup everything bagel seasoning blend together in the bowl of your stand mixer or food processor. Begin mixing and slowly pour in the warm water.
If the dough looks dry, add up to ¼ cup more water, spoonful by spoonful, mixing well between additions.
Once the dough forms a large ball, remove and dust with flour. Using floured hands, tuck the edges under to shape into a smooth round ball. Place in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour, until doubled in size.
Punch down the dough to release air bubbles, cover, and let it rest for 10 minutes.
Preheat the oven to 220 C (425 F) and bring a wide, high-sided skillet of water to a low boil.
Divide the dough into 8 equal pieces and shape each into a ball.
Gently flatten each piece, tuck the edges into the middle, flip it over, and use your thumb to poke a hole in the center. Stretch the hole wide (it will shrink as it bakes).
Drop each bagel into the boiling water for 1 minute per side. Remove and place on a parchment-lined baking sheet.
Brush with egg wash, coating sides and center, then generously sprinkle with everything bagel seasoning.
Bake for 20 minutes until golden brown. Cool slightly before serving.
