Instant Pot Bamiya (Okra Stew with Lamb)

Ingredients

  • 1 kilo fresh or frozen okra
  • 2 tbsp olive oil
  • 1 tbsp dry coriander
  • 1 medium onion chopped
  • 4 garlic cloves minced
  • ½ kilo lamb stew meat cubed
  • 2 cans diced tomatoes
  • 2 tbsp tomato paste
  • 2 tbsp seven spice
  • Salt to taste
  • ½ cup chicken stock or water

Instructions

  • Set Instant Pot to Sauté and add olive oil and dry coriander until fragrant.
  • Add onions and garlic and sauté until softened.
  • Add lamb stew meat and brown well. Turn off sauté mode.
  • Add okra, diced tomatoes, tomato paste, seven spice, salt, and stock. Stir gently.
  • Seal the Instant Pot and pressure cook for 20 minutes.
  • Manually release the pressure.
  • Optional: sauté cilantro and garlic in olive oil until golden and pour over the stew before serving.
  • Serve warm with vermicelli rice.
