Tomato Feta Shrimp Bake (Easy Mediterranean Recipe)

Ingredients

  • 1 kg medium shrimp deveined and tails removed
  • 1 large onion chopped
  • 6 cloves garlic chopped or crushed
  • 2 tablespoons smoked paprika
  • 2 tablespoons dry oregano
  • 2 tablespoons fresh dill
  • ½ cup sliced olives
  • ½ cup feta cheese cubes or crumbled feta
  • 2 cans diced tomatoes
  • Salt to taste
  • Olive oil for sautéing and marinating

Instructions

  • Mix shrimp with half of the garlic, half the olive oil, 1 tablespoon smoked paprika, 1 tablespoon oregano, and 1 tablespoon dill. Stir well and set aside to marinate.
  • Preheat oven to 200°C (390°F).
  • In a medium skillet, sauté onions and remaining garlic in olive oil until translucent.
  • Add diced tomatoes and stir well. Season with smoked paprika, oregano, dill, and salt. Let simmer for 5 minutes.
  • Pour the tomato mixture into a medium baking dish.
  • Add the marinated shrimp and gently mix.
  • Top with sliced olives and feta cheese.
  • Bake for 20 minutes, until the shrimp are cooked through and the sauce is bubbly.
  • Serve warm with crusty bread, over pasta, or alongside fluffy rice.
