Obviously, I miss all things Costco. And I suddenly had this marinated salmon craving. Marinating overnight is ideal. Otherwise, only 3 hours will do.
Costco sells this delicious frozen marinated salmon where each of the filets is individually wrapped with the marinade. All you have to do is bake it.

The easiest, simplest, most flavorful one pan 30 minute meal. These Sheet Pan Shrimp Fajitas will not disappoint. Serve with shredded cheese, sour cream, warm tortillas, and a side of chips salsa and guac.
One of my favorite foods (even before I visited Barcelona in 2017 and experienced the authentic version) is Seafood Paella. What is Paella (pie-yay-ya; the L’s are silent)? Paella is a Spanish rice dish made in one frying pan, originating from Valencia, on the eastern coast of Spain. It began as a peasant/laborer’s dish that is now popular all over Spain. It is rumored that paella actually comes from the Arabic root word “baqiya” meaning leftovers. However, linguists actually credit the name paella to the frying pan in which the dish is made, known in Spanish as la paella.

Writer’s block. You’d think being a Communications Specialist would mean that words come easy to me all the time. Yes, I can express myself so much better through writing—because there’s that added benefit of proofing and editing your work—But some days I hit a serious writer’s block. It’s the worst. I’m not a huge fan of Asian foods [and by Asian, I mean far-east Asian]. I’m extremely picky. Not because I’m not adventurous with food, but everyone has different tastes and mine just happens to not be extremely fond of the sauces. I usually have one or two go-to items when I’m stuck in a situation where I have to have Chinese, or Thai, or Japanese food – usually because I’m the minority. And usually, my go-to items are sauce-free or are pretty bland in flavor. Everyone’s entitled to their prerogative and this is mine. (more…)
Summer is almost over. I spend all winter waiting for summer and it just flies by in the blink of an eye. This year, I didn’t even get a chance at proper beach time. The one weekend I dedicated to working on my tan and being lazy on a beach chair was ruined by summer rain. So bad, that we left early making it a less than enjoyable weekend, to say the least. I have other things to say about that particular weekend, but I’ll keep that to myself. (more…)
