2cupsshredded cooked chickenrotisserie or pre-cooked
½ to 1cupBBQ sauceuse your favorite — I used hickory smoked BBQ sauce
½teaspoonsmoked paprika
½teaspoongarlic powder
6–8 slider buns or dinner rolls
½small red onionthinly sliced
1 to 2cupsshredded cheesemozzarella, cheddar, or a mix
1–2 tablespoons chopped cilantrooptional
1–2 tablespoons melted butteroptional, for brushing buns
Instructions
Preheat the oven
Preheat your oven to 180°C / 350°F. Lightly grease a baking dish or line it with parchment paper.
Prepare the BBQ chicken filling
In a bowl, mix the shredded cooked chicken with BBQ sauce, smoked paprika, and garlic powder. Start with ½ cup BBQ sauce, then add more if needed. You want the chicken saucy, but not dripping.
Prepare the buns
Slice the slider buns in half horizontally. Place the bottom half of the buns in your baking dish.
Assemble the sliders
Spread the BBQ chicken evenly over the bottom buns. Add sliced red onion, then sprinkle the shredded cheese over the top. Place the top buns back on.
Bake covered
Cover the baking dish with foil and bake for 12 minutes, until the sliders are warm and the cheese starts melting.
Brush with butter
Remove the foil. Brush the tops of the buns with melted butter.
Bake again uncovered
Return to the oven and bake uncovered for 5 more minutes, or until the bun tops are golden and slightly crispy.
Serve
Let the sliders cool for 2–3 minutes, then slice and serve warm. They go especially well with purple cabbage pickle slaw.
Notes
These are great with Purple Cabbage Pickle Slaw on the side or tucked into the sliders.
Use rotisserie chicken to make this extra quick.
Hickory smoked BBQ sauce adds great flavor.
No slider buns? Hamam bread or soft rolls work too.
