BBQ Chicken Sliders (Easy Weeknight Dinner Idea)

Ingredients

  • 2 cups shredded cooked chicken rotisserie or pre-cooked
  • ½ to 1 cup BBQ sauce use your favorite — I used hickory smoked BBQ sauce
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 6 –8 slider buns or dinner rolls
  • ½ small red onion thinly sliced
  • 1 to 2 cups shredded cheese mozzarella, cheddar, or a mix
  • 1 –2 tablespoons chopped cilantro optional
  • 1 –2 tablespoons melted butter optional, for brushing buns

Instructions

Preheat the oven

  • Preheat your oven to 180°C / 350°F. Lightly grease a baking dish or line it with parchment paper.

Prepare the BBQ chicken filling

  • In a bowl, mix the shredded cooked chicken with BBQ sauce, smoked paprika, and garlic powder. Start with ½ cup BBQ sauce, then add more if needed. You want the chicken saucy, but not dripping.

Prepare the buns

  • Slice the slider buns in half horizontally. Place the bottom half of the buns in your baking dish.

Assemble the sliders

  • Spread the BBQ chicken evenly over the bottom buns. Add sliced red onion, then sprinkle the shredded cheese over the top. Place the top buns back on.

Bake covered

  • Cover the baking dish with foil and bake for 12 minutes, until the sliders are warm and the cheese starts melting.

Brush with butter

  • Remove the foil. Brush the tops of the buns with melted butter.

Bake again uncovered

  • Return to the oven and bake uncovered for 5 more minutes, or until the bun tops are golden and slightly crispy.

Serve

  • Let the sliders cool for 2–3 minutes, then slice and serve warm. They go especially well with purple cabbage pickle slaw.

Notes

  • These are great with Purple Cabbage Pickle Slaw on the side or tucked into the sliders.
  • Use rotisserie chicken to make this extra quick.
  • Hickory smoked BBQ sauce adds great flavor.
  • No slider buns? Hamam bread or soft rolls work too.
  • More cheese makes them even better.
